I’m back on the green smoothie train and am doing a 30 day green smoothie challenge to see if I can up my vegetable intake.
In order to make this easy, I’ve been meal-prepping my green juices, which entails creating smoothie sized portions of my greens and fruits and putting them into the freezer.
Each morning you pop them into your blender and voila!
I should note that the recipe below gives you enough for four smoothies. This is good because Chris and I can each have a serving, and then store an extra serving for the next day.
The good thing about this smoothie is that you get to keep all the fibre, as opposed to green juices where you dispose of the pulp.
If you wanted to add more fruit, you could also throw in some blueberries or other berries, but for this specific one I really like the balance of the green veggies with the apple, lemon and banana.
Sometimes it’s small acts like getting more greens into our diet that can make such a big difference in not only our energy levels, but our overall sense of well-being and sense of being cared for.
The recipe comes from Kimberley Snyder, although I’ve change it up a bit, and it is:
12 fl oz Cold Water
1/2 head Romaine Lettuce
1.5 cups of Fresh Spinach and 0.5 cup of frozen spinach
3 stalks of Celery
1/3 of a Cucumber
1 Granny smith Apple, cored, sliced
1/2 banana
1/2 lemon – the full lemon! Skin and all.
1 cup ice
